BUTTERNUT SQUASH is a hearty winter squash with a creamy sweet flavor. Its orange color indicates that it is a good source of beta-carotene and other antioxidant carotenoids. Winter squash are harvested from late summer to early fall and can be stored for a few months making this a great soup for a cold winter day.
